Becoming More Domestic: Fruit Salsa

Big family 4th of July cookout yesterday (I'll get that post up tomorrow probably) but I had to bring two dishes. For once, it was kinda fun... did I just say that about cooking? Oh, I may be a changed woman! Anywho, I made the BLT pasta salad again... which turned out even better! And it was nice to be able to throw everything together generally from memory since I had just made it last week. That has never happened! Made the process go by that much quicker. But I also decided to give fruit salsa and cinnamon chips a shot. Now as I was adding the sugar, preserves, and all the other sweetener to the fruit I wanted to cringe. I mean I was taking the wonderfully healthy fruit and well, making it not so healthy! But it was amazing! My moms family is HUGE! I mean 13 brothers and sisters huge so that makes for a lot of people. They may have been my toughest critics yet. They can cook. There is always such amazing food and generally when I go to these parties I grab a package of cupcakes and a bag of chips! So this was a big step for me. But you know what? I got great feedback! I overheard one of my aunts say, "who made that fruit salsa? It is great!" I just sat back and listened... woah, I got a compliment on my cooking!

Anyways, enough about that here is the recipe! Super easy although chopping up all the fruit was a little time consuming.

Ingredients for the salsa:
-Fruit... I am sure you could use whatever kind you have! I used blueberries, apples, strawberries and raspberries. But you could add kiwis, pears, peaches, etc.
-White sugar and brown sugar
-Strawberry preserves... again, you could use any flavor

Basically mix everything together and voila... fruit salsa!

As for the cinnamon chips again super easy!
-Flour tortillas
-Melted butter
-Cinnamon and sugar

Preheat oven to 350 degrees. Coat one side of the tortilla with butter and sprinkle with cinnamon and sugar. Cut into fours and bake for about 10 minutes until crispy! They were amazing and it made the whole house smell like fall. Yes, I loved it! I love the fall and the holidays so a little baked cinnamon in July was wonderful! This little dish here was perfect for the cookout! Will be keeping this recipe handy for the next time! Enjoy the 4th of July!
