I completely forgot to post my week 4 recipes, yes I got 2 in again that week!
First we made "SkettiMeatballs" as Audrey would call it. She loves spaghetti but says she hates pasta...I will not worry her with the details. So last week we made baked meatballs! My first go at meatballs... generally we just use the generic kind or the kind out of the can. Sick I know.
Ingredients:
- I used one pound of Jenni-O ground turkey (going for a healthy dish)
-2 cups of bread crumbs
-1 small onion
-2 cloves garlic minced
-1 tbsp of italian herbs
-1 extra large beaten egg
-1 medium potato peeled and finely shredded
-1 tsp paprika
-1/4 cup chicken broth
Place all ingredients in a bowl and mix except the egg and broth. After mixed these ingredients well add in the egg and chicken broth.

After all the ingredients are mixed shape into meatballs! Easy enough! I found a good way to cook these online by putting a cookie cooling rack inside a baking sheet. What a great idea! Maybe I am the last one to figure this out! Cook for a half hour at 350. Looks as if I didn't snap a picture of this so you'll have to take my word for it but they turned out really good!
Next we added spaghetti sauce (right out the can, I am not that good yet) and some mozzarrella cheese! And baked meatballs are done.
Audrey really liked them although since she helped, she seen me cutting up the onion and tried to pursade me into not adding it in. I only had large onions so I just used a portion of one but it was definatly to much. And I didn't not chop them enough (refer to the first picture) so she definatly knew they were in there. Eh, we just picked them out no big deal. Note for next time: less onions.
Also, I really liked them as did Audrey but I do not think that Chris would be a huge fan of the Jenni-O turkey in this recipe. They were kind of dry and there was no grease (that was the point for me) but as for most men they wants meat. So when he is home we would probably use just regular ground beef.
After dinner last weekend we decided to give Oreo Cupcakes a shot! Of course Audrey was much more willing to help in this project than vegetables and meat.
Ingredients:
-A package of Oreos. You will not need the whole package but obviously we were snacking while baking. We used the Valentines Berry filled Oreos! Really good!

-1 pound cream cheese ( I used 2 packages of light philadelphia cheese)
-1 tsp of vanilla extract
-pinch salt

-And a bunch of oreo smashed (a great meaurement right there)
-The recipe also calls for 1/2 cup of sour cream. I didn't have any so I left it out. Seemed to turn out okay!

Put one oreo per cupcake paper and eat a few while doing this step. It is kinda mandatory.
In a large mixing bowl, beat the cream cheese until smooth. Then add in the sugar, mix until very well combine. Beat in the vanilla. Lastly, add the eggs and beat until very smooth. Then stir in the cookies that you smashed :)

Bake for about 20 minutes and let cool. These do need to be refridgerated afterwards (If you do not eat them all)
I got out some red sprinkles because Audrey HAD to put them on the cupcakes. These aren't really your frosting and sprinkles kind of cupcakes but if she wanted to put some sprinkles on themwas fine with me. I mean she was going to be eating them anyways. Well as I walked away for one second she FILLED them with sprinkles. Note the picture above and how they are not completely to the top of the wrapper ... well now they are :)
Oh well this is fun for her..
Anywho, the Oreo cupcakes were are great success! Good thing I salvaged some before the sprinkle monster attacked :)
